BBQ Chicken Pizza (Modified from Biggest Loser Cookbook)
1 Low Carb 6 inch Whole Wheat Tortilla (I used 70 calorie Buena Vida from Walmart)
2 Tbsps BBQ Sauce (The lowest calorie sauce I could find was Budweiser. It was also fairly low on carbs.)
2 slices of low fat cheese (I used Sargento Reduced Fat Provolone)
2 baked chicken tenders (I used Kroger brand frozen chicken tenders)
Fresh Cilantro
Preheat oven to 400 F
Place tortilla on a nonstick baking sheet or stone and bake for 4 minutes per side or until crisp
Remove from oven and top with sauce, then chicken, cheese, and cilantro.
Bake for an additional 4 minutes or until cheese is melted (Switch to broil for a couple minutes if you like you cheese slightly browned)
Only 265 calories, 10g of fat, 29g of protein, 18g of carbs
Definitely gonna have to make this one soon. That sounds delicious!
BAKED EGGS IN SAVORY TURKEY OR HAM CUPS
4 slices of very thinly sliced turkey or ham (I used Oscar Mayer Deli Fresh Turkey and Ham)
8 large egg whites
1 Tbsp chopped fresh cilantro
1 slice low-fat cheese (I used Sargento Reduced Fat Colby-Jack)
4 Tbsps salsa
Preheat oven to 400 F. Lightly coat each cup of a standard size nonstick muffin pan with olive oil cooking spray.
Line each muffin cup with a slice of ham or turkey. Spoon 1 tablespoon of salsa into each cup. Add 2 egg whites to each cup.
Place the muffin pan in the oven and bake for 10 to 12 minutes, or until the eggs are puffed and the center is set.
Remove from oven and add 1/4 of a slice of cheese and a dash of cilantro to each cup.
Place back in oven until cheese is melted.
4 muffins at only 161 calories, 2g of fat, 25g protein, 2g carbs
My wife and I were just talking yesterday about pizza and how she wanted to make homemade pizza and I said find a healthy way to do it and I’ll eat it. — we even have the biggest loser cookbook and didn’t think about looking in it. Thanks!

Mixed Berry Smoothie
Ingredients
1 cup plain yogurt w/live cultures — I use Dannon because it’s cheap
1 medium banana
1/4 cup skim milk
1/2 cup mixed berries — frozen or fresh
1 tbsp Agave Nectar — or whatever sweetener you use
Directions:
Mix all of the ingredients together and put into a blender. If you use frozen fruit it will take longer to blend. I liquify all of the ingredients but some might like a thicker consistency. Blend to your liking.
Chill for thirty minutes or drink fresh.
It’s quick and full of awesome nutrients.
